I've been working almost all my life in the restaurant business.

Over the last 27 years, I have been working in the food, beverage, and hospitality industry as a working Kitchen Manager, Head Chef, Executive Chef, and Sous Chef. Starting as a dishwasher at a local Italian American club , in Punta Gorda, Fla at age 11, to becoming an Executive Professional Chef of Camel Rock Casino at age 21. I have come a long way to where I am now.

Cooking for people from both ex-GA Governor Zell Miller, recent GA Governor Sonny Perdue, Senator John Snow, and Senator Tucker. Past Presidents Jimmy Carter, George Bush Sr, First Ladies Barbra Bush, and Nancy Reagan. My food has graced the lips of Dolly Parton, Reba Macintyre, and Waylon Jennings. I have a plate signed by Travis Tritt. I've earned a 4 1/2 star review from Food Beverage and Hospitality Magazine, while at the WaterCrest at the Fieldstone Resort under Chef Daniel F. Baker.

Using an hands on approach with all aspects of food production, training, and running a large or small kitchen with different department staff, and even culinary students, has come to me naturally. I have been in the management field as well, starting in my teens with the Texaco Corporation, opening the first co-op Diary Queen Texaco in the United States, and becoming Assistant Head Manager at 17.

Being totally unaccredited and self taught, has allowed me to apply my own skills in American Italian, American, American S.W., Scottish, Irish, Southern American, and dabbling in other areas as well, without being strapped down to a set learned style. Having not been formally trained has allowed me to become a great chef, using skills compiled, and honed from many years of training, and experimentation. I'm an artist, and totally original.

Working in the Culinary field of hospitality, and food production, has given me a great sense of what kind of food quality, and needs of today’s restaurant owners/managers desire.
